Description
Forgotten Chicken is a creamy baked casserole made with chicken breasts, rice, and savory onion seasoning. It is a simple one-pan dinner perfect for busy weeknights.
Ingredients
1 lb boneless skinless chicken breasts
2 cups Minute rice
1 can cream of chicken soup
1 can cream of mushroom soup
1 can water
1 tablespoon butter
1 envelope Lipton onion soup mix
Instructions
1. Preheat oven to 350°F and butter a 9×13 baking dish.
2. Mix cream of chicken soup, cream of mushroom soup, water, and Minute rice in a bowl.
3. Pour mixture into the prepared baking dish.
4. Place chicken breasts on top of the rice mixture.
5. Sprinkle onion soup mix evenly over the chicken.
6. Cover tightly with foil and bake for 1 to 1½ hours until chicken is cooked through.
Notes
Use brown Minute rice for a healthier option.
Chicken thighs can replace chicken breasts for extra flavor.
Store leftovers in the refrigerator for up to 3 days.
