A creamy and hearty easy Tuscan white bean soup recipe packed with flavor and comfort.
Ingredients
2 lbs potatoes
2 cups chicken broth
8 oz bacon
1/2 onion
2 garlic cloves
1 tsp salt
1/4 tsp pepper
4 tbsp butter
1/4 cup flour
2 cups milk
1 cup cheddar cheese
3/4 cup sour cream
Green onions
Instructions
1. Add potatoes, broth, bacon, onion, garlic, salt, and pepper to crockpot
2. Cook on high for 3–4 hours or low for 5–6 hours until potatoes are tender
3. Mash potatoes lightly
4. Add butter, flour, milk, cheese, and sour cream
5. Cook for another 30–60 minutes until thick and creamy
6. Serve with green onions
Notes
Mash partially for best texture
Add broth if soup becomes too thick
Serve warm for best flavor
