Description
Easy Skillet Breakfast Potatoes cooked on the stove top until crispy and golden. The best breakfast potatoes for any morning.
Ingredients
1 1/2 pounds potatoes
2 tbsp butter
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp smoked paprika
Pinch of cayenne pepper
Optional: rosemary, thyme, or garlic cloves
Salt and pepper to taste
Instructions
1. Peel, wash, and quarter the potatoes. Microwave for 3-4 minutes until slightly tender.
2. Let potatoes cool and dice into 1/2-inch pieces.
3. Heat olive oil and butter in a large skillet over medium-high heat.
4. Add potatoes in a single layer and season evenly.
5. Cook for about 10 minutes, flipping every 3 minutes until golden and crispy.
6. Adjust seasoning and serve immediately.
Notes
Do not overcrowd the skillet.
Dry potatoes well for maximum crispiness.
Cast iron skillet delivers best results.
