Easy No-Knead Zucchini Pizza is a fresh, low-carb summer appetizer made with zucchini rounds, mozzarella, pizza sauce, and basil. Perfect for entertaining or quick snacks.
Ingredients
2 medium zucchini, cut into twenty-four 1/2-inch rounds
2 tsp olive oil
1/4 cup prepared pizza sauce
24 slices pepperoni (optional)
4 oz fresh mozzarella, cut into 24 small pieces
1/2 tsp kosher salt
Fresh tomato slices
Fresh basil leaves
Instructions
1. Line a rimmed baking sheet with aluminum foil and preheat the broiler to high.
2. Trim zucchini ends and slice into 1/2-inch rounds.
3. Heat olive oil in a nonstick skillet over medium-high heat.
4. Brown zucchini on one side only for 4-5 minutes.
5. Transfer zucchini browned side up to baking sheet.
6. Top each round with pizza sauce, pepperoni if using, and mozzarella.
7. Broil for 4-5 minutes until cheese melts and bubbles.
8. Top with fresh tomato slices, basil, and sprinkle with kosher salt. Serve immediately.
Notes
Do not overcrowd the skillet while browning zucchini.
Avoid overloading sauce to prevent sogginess.
Serve immediately for best texture.
For vegetarian option, omit pepperoni.
