Description
A comforting and easy chicken tortellini soup packed with vegetables, tender chicken, and cheesy tortellini. Perfect for a quick homemade dinner.
Ingredients
1 tablespoon olive oil
1/2 medium onion chopped
3 sticks celery finely chopped
3 large carrots chopped
2 cloves garlic minced
1/2 teaspoon Italian seasoning
8 cups chicken broth
2 cups shredded cooked chicken
2 (9 ounce) packages refrigerated cheese tortellini
Salt & pepper to taste
Chopped parsley
Instructions
1. Heat olive oil in a large pot and sauté onion for 5-7 minutes until slightly browned
2. Add celery, carrots, garlic, and Italian seasoning and cook for a few minutes
3. Pour in chicken broth and bring to a boil
4. Reduce heat and simmer for 10 minutes until vegetables are tender
5. Add shredded chicken and tortellini
6. Cook for a few minutes until tortellini is tender
7. Season with salt and pepper and garnish with parsley before serving
Notes
Use rotisserie chicken to save time
Add cream for a richer version
Store tortellini separately if meal prepping to prevent sogginess
