Delicious grilled chicken Caesar pasta mason jar salads perfect for meal prep and healthy lunches.
Ingredients
1.5 lbs chicken breast
1.5 tsp kosher salt
1.5 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 lemon
8 oz pasta
2 heads romaine lettuce
1/2 cup Caesar dressing
Instructions
1. Cut chicken into 4 thinner pieces
2. Mix kosher salt, Italian seasoning, garlic powder, and onion powder
3. Season chicken evenly
4. Preheat grill pan over medium-high heat
5. Spray pan with nonstick spray
6. Cook chicken for 5 minutes, flip, cover, and cook until it reaches 165F
7. Remove lid and finish cooking, about 10-15 minutes total
8. Remove chicken, squeeze lemon over top, and slice into strips
9. Boil salted water in a large pot
10. Cook pasta 6-8 minutes until al dente, then drain
11. Lightly spray pasta with oil to prevent clumping
12. Wash and chop romaine lettuce
13. Layer chicken, pasta, and romaine into 4 mason jars
14. Keep dressing on the side until serving

Store jars upright in the fridge for up to 4 days
