Description
Crock Pot Creamy Cajun Chicken Pasta made with tender chicken, bold Cajun seasoning, bell peppers, and a rich Parmesan cream sauce.
Ingredients
1 lb boneless skinless chicken breasts
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 bell pepper sliced
1 small onion sliced
3 cloves garlic minced
1 can diced tomatoes with juices
1 cup chicken broth
1/2 cup heavy cream
1/2 cup Parmesan cheese
8 oz penne pasta
Fresh parsley for garnish
Instructions
1. Season chicken with oil and spices.
2. Brown chicken in skillet 2–3 minutes per side.
3. Place chicken in slow cooker.
4. Add bell peppers, onion, garlic, tomatoes, and broth.
5. Cook on low 4–5 hours or high 2–3 hours.
6. Shred chicken and return to pot.
7. Stir in cream and Parmesan.
8. Cook pasta separately until al dente.
9. Add pasta to slow cooker and mix.
10. Heat together 15–20 minutes and serve.
Notes
Adjust Cajun seasoning for desired spice level.
Cook pasta separately for best texture.
