Ingredients
2 cups grated zucchini
1 egg
1/2 cup flour
1/4 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil for frying
Instructions
1. Grate zucchini and lightly squeeze out excess moisture.
2. In a bowl, mix zucchini, egg, flour, Parmesan, salt, and pepper.
3. Heat oil in a skillet over medium heat.
4. Drop spoonfuls of batter into the skillet and flatten slightly.
5. Cook for 3-4 minutes per side until golden brown.
6. Drain on paper towels and serve warm.
Notes
Squeeze zucchini thoroughly to prevent soggy fritters.
Do not overcrowd the skillet.
