Creamy Lemon Lush is a layered dessert with a buttery pecan shortbread crust, tangy cream cheese filling, smooth lemon pudding, and a fluffy whipped topping finish.
Ingredients
2 cups all-purpose flour
1 cup unsalted butter, softened
1/2 cup powdered sugar
1/2 cup finely chopped pecans
2 packages cream cheese, softened
1 cup powdered sugar
1 cup whipped topping
1 tablespoon freshly squeezed lemon juice
1 teaspoon grated lemon zest
2 packages instant lemon pudding mix
3 cups cold whole milk
2 cups whipped topping
Optional garnish: chopped pecans

Instructions
1. Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
2. Mix together the flour, butter, powdered sugar, and pecans until crumbly. Press evenly into the prepared pan.
3. Bake for 20 to 25 minutes until lightly golden. Cool completely.
4. Beat the cream cheese and powdered sugar until fluffy.
5. Fold in 1 cup whipped topping, lemon juice, and lemon zest until smooth. Spread evenly over the cooled crust.
6. Whisk the pudding mixes and milk for 2 minutes. Let stand for 5 minutes to thicken.
7. Spread the pudding over the cream cheese layer. Refrigerate for at least 1 hour to set.
8. Spread the remaining whipped topping over the pudding layer.
9. Refrigerate for at least 4 hours, or overnight, before serving.
10. Garnish with chopped pecans or lemon slices just before serving, then slice and serve chilled.
Notes
Let the crust cool fully before adding the cream cheese layer.
Overnight chilling gives the cleanest slices.
Wipe the knife between cuts for neat layers.
