Description
Creamy Chicken Noodle Soup is a comforting homemade soup made with tender chicken, egg noodles, vegetables, and a rich creamy broth. Perfect for cozy dinners and easy family meals.
Ingredients
1 Tablespoon (14g) unsalted butter
3/4 cup chopped yellow onion
1 cup sliced carrots
1 cup sliced celery
2 garlic cloves minced
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1/2 teaspoon dried oregano
8 cups chicken broth
1 medium potato diced
2 cups cooked shredded chicken
1 cup half-and-half or whole milk
3–4 cups uncooked egg noodles
Fresh thyme leaves for garnish (optional)
Instructions
1. Melt butter in a large pot over medium heat. Add onion carrots celery and garlic. Cook for 5 minutes until softened.
2. Stir in flour salt pepper thyme and oregano. Cook for 2 minutes while stirring.
3. Add chicken broth and diced potato. Bring soup to a boil and cook for 3 minutes.
4. Reduce heat and simmer for about 25 minutes until potatoes are tender.
5. Add shredded chicken milk and egg noodles.
6. Cook for 10 minutes until noodles are tender and soup thickens.
7. Taste and adjust seasoning if needed then serve warm.
Notes
Rotisserie chicken works well for this recipe.
Soup thickens when stored because noodles absorb broth.
Add extra chicken broth when reheating leftovers.
