Comforting Zucchini Pizza Casserole delivers classic pizza flavor with a healthy zucchini crust.
Ingredients
4 cups grated zucchini (drained)
2 large eggs
1/4 cup grated parmesan cheese
1/2 cup shredded mozzarella
1/2 teaspoon salt
1/2 teaspoon minced garlic
1 teaspoon Italian herbs
32 ounces spaghetti sauce
2 cups shredded mozzarella
4 ounces pepperoni slices
Green bell pepper

Instructions
1. Drain zucchini thoroughly.
2. Preheat oven to 400°F and spray baking dish.
3. Mix zucchini with eggs, cheese, and seasonings.
4. Press mixture into pan and bake 20 minutes.
5. Spread sauce and add toppings.
6. Bake 20 more minutes and rest before slicing.
Notes
Squeeze zucchini aggressively to prevent watery crust.
Broil 2–3 minutes for golden top.
Store leftovers up to 4 days.
