Description
Tender oven-baked chuck roast recipe made with simple ingredients for a budget friendly family dinner.
Ingredients
2 teaspoons olive oil
4 pounds boneless chuck roast
1 onion, chopped
2 cloves garlic, minced
2 bay leaves
1 teaspoon salt
½ teaspoon black pepper
Optional: 4 potatoes and 4 carrots
Instructions
1. Preheat oven to 325°F.
2. Heat oil in Dutch oven over medium-high heat.
3. Sear roast 3–4 minutes on each side.
4. Remove roast and add onion, garlic, and bay leaf.
5. Return roast to pot and season with salt and pepper.
6. Cover and cook 30 minutes.
7. Reduce heat to 300°F and cook 1½ hours.
8. Add potatoes and carrots during last hour if desired.
9. Rest roast 10 minutes before slicing.
Notes
Use a Dutch oven for best results.
Add vegetables for a complete one-pot meal.
Store leftovers for additional meals.
