Description

Juicy Chicken Tsukune skewers glazed with authentic sweet-savory tare sauce, perfect as Japanese appetizers or party food.


Ingredients

1/2 cup mirin

1/2 cup soy sauce

1/4 cup sake

1/4 cup dark brown sugar

1 tablespoon sherry vinegar

3 cloves garlic

3 scallions

1-inch ginger piece

1 tablespoon peppercorns

1 1/2 pounds ground chicken thighs

1/2 cup panko bread crumbs

1/4 cup chopped scallions

1 egg

2 teaspoons grated ginger

2 teaspoons minced garlic

1 teaspoon sesame oil

1 teaspoon kosher salt

1/2 teaspoon white pepper


Instructions

1. Combine tare sauce ingredients in saucepan and simmer until thickened.

2. Strain sauce and set aside.

3. Mix chicken, panko, scallions, egg, ginger, garlic, sesame oil, salt and pepper.

4. Form into 1-inch meatballs and thread onto skewers.

5. Grill over hot charcoal, turning until browned on all sides.

6. Brush with tare sauce and cook 15–30 seconds more.

7. Rest 5 minutes and serve immediately.

Notes

Use chicken thighs for juicier texture.

Brush glaze at the end to prevent burning.

Chill mixture if too soft before shaping.
