Description
Chicken Salad in Puff Pastry is a flaky appetizer made with tender chicken, grapes, walnuts, and Greek yogurt served inside crispy puff pastry cups.
Ingredients
1 (17.3 oz) box puff pastry, defrosted
1 egg
all-purpose flour
6 oz cooked chicken breast, chopped
3 tbsp red onion, finely chopped
3 tbsp walnuts, finely chopped
3/4 cup grapes, halved
1/4–1/2 tsp sea salt
1/3 cup plain Greek yogurt
chopped chives for garnish
Instructions
1. Preheat oven to 400°F
2. Roll out puff pastry and cut 2-inch circles
3. Cut smaller circles from half to create rings
4. Place whole circles on baking sheet and stack rings on top
5. Brush with egg wash and chill 30 minutes
6. Bake 16–20 minutes until golden
7. Mix chicken, grapes, walnuts, onion, yogurt and salt
8. Remove center of baked pastry stacks
9. Fill cups with chicken salad
10. Garnish with chives and serve
Notes
Use rotisserie chicken for faster preparation
Assemble cups just before serving to keep pastry crisp
