Description

Creamy chicken broccoli rice casserole made with tender chicken, fresh broccoli, fluffy rice and melted cheddar cheese. A comforting family dinner perfect for busy weeknights.


Ingredients

2 tablespoons butter

2 boneless skinless chicken breasts or 2 cups diced rotisserie chicken

Salt and pepper to taste

1 teaspoon Italian seasoning

2 1/2 cups chicken broth

1 tablespoon olive oil

1 1/4 cups white long grain rice uncooked

2 to 3 cups fresh broccoli florets

10.5 oz cream of chicken soup condensed

1/2 cup milk

1/2 cup sour cream

2 cups shredded cheddar cheese separated


Instructions

1. Preheat oven to 350°F and season diced chicken with salt pepper and Italian seasoning

2. Melt butter in pot and cook chicken until golden then remove

3. Add chicken broth olive oil and rice bring to boil then simmer covered 6 minutes

4. Add broccoli cover and cook 9 minutes until rice is tender

5. Remove from heat and let stand covered 10 minutes

6. Stir in cooked chicken soup milk sour cream and half the cheese

7. Transfer mixture to greased 9×13 casserole dish

8. Top with remaining cheese and bake covered 15 minutes

9. Uncover and bake another 10 minutes until cheese is melted and bubbly

Notes

Use rotisserie chicken for faster preparation

Fresh shredded cheese melts better than pre shredded cheese

Add a splash of milk when reheating leftovers
