Description
A comforting homemade chicken and sliced carrots soup with egg noodles, fresh herbs, and tender shredded chicken. Perfect for cozy family dinners.
Ingredients
2 tablespoons olive oil
4 large carrots sliced
4 celery stalks sliced
1 small onion diced
3 garlic cloves minced
2 tablespoons fresh thyme
Salt and pepper
10 cups chicken broth
12 ounce wide egg noodles
2 cups shredded chicken
2 tablespoons fresh parsley
Instructions
1. Heat olive oil in a large pot over medium-high heat.
2. Add sliced carrots, celery, and onion. Sauté for 4–5 minutes until tender.
3. Add garlic, thyme, salt, and pepper and cook for 1 minute.
4. Pour in chicken broth and add egg noodles. Bring to a boil.
5. Reduce heat and simmer about 10 minutes until noodles are al dente.
6. Add shredded chicken and fresh parsley.
7. Simmer until chicken is heated through. Adjust seasoning and serve.
Notes
Use rotisserie chicken to save time.
Cook noodles separately if storing leftovers.
Add extra vegetables for a richer soup.
