Classic chicken and mashed potato casserole packed with creamy, savory flavors. Freezer-friendly and family-approved.
Ingredients
2 cups cooked shredded chicken
3 cups mashed potatoes (prepared)
1/2 cup sour cream
1/2 cup milk or broth
1/2 cup shredded cheddar cheese
1/4 cup chopped parsley or chives
Salt and pepper to taste
1/2 tsp garlic powder
Optional: frozen peas or corn, sautéed mushrooms
Instructions
1. Preheat oven to 375°F (190°C) and grease a casserole dish.
2. In a large bowl, mix mashed potatoes with sour cream, milk, and seasonings.
3. Spread shredded chicken into the bottom of the dish. Add optional veggies if using.
4. Layer the mashed potato mixture over the chicken evenly.
5. Top with shredded cheese and extra herbs.
6. Bake uncovered for 25–30 minutes or until golden and bubbly.
7. Let cool slightly before serving. Enjoy!
Notes
For a crispy top, broil for 2–3 minutes at the end.
Freeze assembled dish before baking for up to 2 months.
Use leftover mashed potatoes and rotisserie chicken to save time.
