Description
Creamy cheesy rice and ham casserole with broccoli and a crispy buttery Ritz cracker topping. Perfect comfort dinner for busy families.
Ingredients
2 Tablespoons unsalted butter
1/2 cup yellow onion diced
1 Tablespoon olive oil
2 1/2 cups chicken broth
1 1/4 cup uncooked white rice
2 cups diced cooked ham
2 cups broccoli florets
10.75 oz cream of chicken soup
1/2 cup sour cream
3/4 cup milk
2 1/2 cups shredded cheddar cheese
Salt and pepper optional
1 cup crushed Ritz crackers
2 Tablespoons melted butter
Instructions
1. Preheat oven to 350°F
2. Melt butter in saucepan and cook onions until softened
3. Add chicken broth olive oil and rice then bring to boil
4. Reduce heat cover and simmer for 8 minutes
5. Add broccoli cover and cook 7 more minutes
6. Remove from heat and let rice sit for 10 minutes
7. Add ham soup sour cream milk and half the cheese
8. Spread mixture in greased 9×13 casserole dish
9. Top with remaining cheese
10. Bake covered for 15 minutes
11. Mix cracker crumbs with butter and sprinkle on top
12. Bake uncovered 10 more minutes until golden
Notes
You can substitute frozen vegetables for broccoli
Leftover holiday ham works perfectly
