This cauliflower pepperoni pizza casserole is a cheesy, low-carb comfort dish that delivers classic pizza flavor in a healthy keto-friendly bake.
Ingredients
4 cups cauliflower florets
1 tablespoon avocado oil
8 ounces sliced mushrooms
1 medium bell pepper diced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1 teaspoon salt
1 1/2 cups low carb marinara sauce
2 to 3 ounces pepperoni
2 cups shredded mozzarella
1/3 cup parmesan cheese
Instructions
1. Cover cauliflower with water and microwave for 90 seconds.
2. Drain and pat dry.
3. Chop into small pieces similar to cauliflower rice.
4. Preheat oven to 400°F.
5. Heat oil and sauté mushrooms for 5 to 7 minutes.
6. Combine cauliflower mushrooms bell pepper and seasoning.
7. Spread marinara sauce in baking dish.
8. Add half cauliflower mixture then sauce pepperoni and mozzarella.
9. Add remaining cauliflower sauce cheese and pepperoni.
10. Top with parmesan and bake 30 minutes.
Notes
Dry cauliflower well to prevent excess moisture.
Use sugar-free marinara sauce for keto diets.
Add fresh basil before serving for extra flavor.
