Description
Candied sweet potatoes cooked in butter, brown sugar, cinnamon, and vanilla until tender and caramelized.
Ingredients
6 large sweet potatoes peeled and cut into 1 inch rounds
1/2 cup unsalted butter
1 cup granulated sugar
1 cup brown sugar packed
1 teaspoon cinnamon
1/2 teaspoon nutmeg
pinch of salt
1 tablespoon vanilla
Instructions
1. Melt butter in a large skillet over medium low heat.
2. Stir in sweet potatoes.
3. Add brown sugar, granulated sugar, cinnamon, and nutmeg. Stir gently.
4. Bring to a simmer and cover.
5. Cook covered for 40 minutes until fork tender, stirring gently 2 to 3 times.
6. Add salt and vanilla. Stir gently and serve.
Notes
Stir gently to prevent breaking the potatoes.
Add lemon juice for a brighter flavor.
Reheat over low heat to avoid burning.
