Description
A hearty beef barley soup recipe made with tender beef, vegetables, and wholesome barley.
Ingredients
1 teaspoon olive oil
1–1/2 lbs beef stew meat
1 cup chopped carrots
1 cup chopped onions
1/2 cup chopped celery
2 cloves garlic
6 cups water
1 1/2 teaspoons kosher salt
2 bay leaves
2/3 cup pearled barley
black pepper to taste
Instructions
1. Heat a large pot over medium heat and add oil
2. Brown the beef with a little salt
3. Add carrots, onions, celery, and garlic and stir
4. Add water, salt, and bay leaves, then bring to a boil
5. Reduce heat and simmer covered for 1.5–2 hours
6. Add barley and cook for 30–35 minutes
7. Remove bay leaves, season with pepper, and serve
Notes
Use beef broth instead of water for richer flavor
Add more liquid if soup thickens too much
