Description
These crispy BBQ chicken quesadillas are perfect for the Blackstone. Smoky, cheesy, sweet and spicy—ready in under 30 minutes.
Ingredients
1 lb boneless, skinless chicken thighs
kosher salt, pepper, BBQ seasoning
3 tbsp BBQ sauce
2 tbsp hot honey
4 burrito-size flour tortillas
3 cups shredded cheese
1/2 cup chopped cilantro (optional)
Cooking oil of choice
Optional: sour cream, jalapeños
Instructions
1. Preheat griddle to medium. Add oil, chicken, salt, pepper, and BBQ seasoning. Cook 6 minutes.
2. Add BBQ sauce and hot honey. Mix and cook 2 more minutes.
3. Remove chicken, scrape griddle, reduce heat to medium-low.
4. Add oil, lay tortillas flat. Add cheese to half of each.
5. Top with chicken, drizzle BBQ sauce and honey, add cilantro.
6. Add more cheese. Fold tortilla over and grill 1–2 min per side.
7. Serve with sour cream, jalapeños, or extra sauce.
Notes
Use chicken breast for leaner version.
Make ahead and reheat on skillet for crispy results.
