Description
Aromatic Ginger Scallion Chicken Noodle Soup is a comforting Asian-inspired soup made with tender chicken, ginger, garlic, noodles, and a tangy soy-vinegar drizzle.
Ingredients
2 lb boneless skinless chicken thighs
6 garlic cloves thinly sliced
1 piece ginger (3 inches) peeled and finely chopped
1 bundle scallions thinly sliced
4 tsp kosher salt
Freshly ground black pepper
10 cups water
8 oz dried ramen noodles
1 cup carrot matchsticks
1/4 cup black rice vinegar
1/4 cup soy sauce
2 tbsp toasted sesame oil
Crispy chili oil to taste
Instructions
1. Combine chicken thighs garlic ginger scallion whites salt pepper and water in a large pot and bring to a boil
2. Reduce heat and simmer until chicken becomes tender about 15 minutes
3. Whisk vinegar soy sauce sesame oil and chili oil in a bowl to create sauce drizzle
4. Remove cooked chicken from pot and shred using two forks
5. Add ramen noodles and carrots to the broth and cook until tender
6. Return shredded chicken to the pot and stir gently
7. Serve hot topped with scallion greens and drizzle with sauce
Notes
Use chicken thighs for richer flavor
Add extra chili oil for spice
Cook noodles separately if storing leftovers
